Half a 400ml tin of coconut milk
1 organic egg
- Blend until very smooth
- Sample the mixture. It’s a wickedly good smoothie – I challenge you to have enough left to freeze…
- …but if you do, simply freeze until solid; we put some in lolly moulds and some in ice cube trays
- Decide to make double next time… (that’s what I did, anyway)
Little L’s verdict? Too busy polishing it off to give a verdict. The fastest I’ve ever seen a frozen dessert disappear.
This recipe comes with the usual health warnings for uncooked egg… I used organic, free range and as fresh as possible.
